The stables are managed by PAOLO GRASSI, who returned to Puglia in 2021 after training young horses for international showjumpers in Italy, Germany and Holland. Paolo is a registered environmental and equi-guide, horse handler, trainer and riding instructor. He works with horses collaboratively, a believer in natural horsemanship. A  certified olive oil sommelier, a competitive showjumper and an artist by passion which he often puts to making luminari, the traditional Pugliese festive lights.
